The historic bar at Le Negresco evokes the cosy and elegant atmosphere of the English clubs once favoured by dandies and elegant society women.

Its timeless décor featuring wood panelling, nineteenth-century wall lights, and plush upholstered Louis XVI armchairs has remained unchanged since 1913, when Le Negresco was inaugurated.

From early October to late May: 6 pm to midnight

A scent of oak and amber wafts around the artworks, which seem to have found the most perfect setting. A marble bust of Queen Marie-Antoinette (1755-1793) with her hair plaited, a 1683 Brussels tapestry entitled Le Temps enchaîné par l’Amour (Time Chained by Love) and a stunning crystal whisky fountain take centre stage.

Our Head Barman performs his magic with his team preparing drinks, and enquiring about guests’ preferences before conducting an impeccably attuned and precise ballet. This is the art of the mise-en-scène, preparing and dressing up creations. Lovers of art and elegance will not resist the temptation of a signature or non-alcoholic cocktail, a liqueur, a whisky, as they delve into the remarkable collection of spirits, accompanied by sweet strains of jazzy, pop or soul music five nights a week.

As the hours tick by, the ambience evolves. Mysterious and elegant by day, celebratory and informal by night. The chiaroscuro plays with light and shadow, providing a perfect backdrop for night owls seeking the ultimate refinement.

Freshness, seasonality, and proximity are the guiding principles of this Meilleur Ouvrier de France, who elevates each ingredient with elegance, audacity, and technical mastery. Around her, a passionate brigade – from her sous-chefs Michelle Gibon and Amélia Losilla to chef de partie – brings to life a vibrant Mediterranean: iodine-rich, plant-filled, and earthy. Each plate pays homage to the rich traditions of Nice, with deep respect for its heritage and the momentum of a resolutely contemporary creativity.

An ever-present Heritage

In 1957, the visionary and passionate Jeanne Augier transformed Le Negresco into a hotel of art and history. Through rare pieces and majestic styles, she created a unique masterpiece on the Riviera. At the heart of Le Chantecler and the Salon Régence, art graces the table: a portrait of Louis XV by La Tour, Marie Leszczynska by Nattier, wood panelling from the Château de Chaintré, or leatherwork from Malines… Every detail reflects the elegance of the Grand Siècle and the finest expression of French excellence.
