Since 2018, the Chef Virginie Basselot has placed seasonality, innovation, and creativity at the heart of her cuisine. Her dishes pay tribute to the unique expertise of the women and men of the region, in a subtle marriage of exceptional ingredients and a careful selection of the finest local artisans. Sobriety and elegance enhance each plate, where perfectly mastered technique serves refined contemporary creations.

Restaurant Director Julien Freulon oversees the dining room with unwavering attentiveness, creating a sense of enchantment and a unique connection with each guest, thus elevating the overall experience. Head Sommelier Jean-Gabriel Siviragol, passionate about both grand crus and more exclusive vineyards, guides guests on a journey through terroirs, grape varieties, and the stories born of his encounters.

The gentle strains of Luc Escolano’s piano create a harmonious backdrop for this gastronomic experience.

Seasonal floral arrangements by Hervé Frézal, also a Meilleur Ouvrier de France, flourish alongside 18th-century artworks. The tableware, crafted by Élisabeth Monroy, Sylvie Lorne, and Les Demoiselles d’Anjou, joins the Haviland and Bernardaud collections. Thoughtfully arranged lighting creates a soft, contemporary ambience.

During the summer season, Le Chantecler opens onto the Promenade des Anglais and flows onto a beautifully landscaped terrace. Seated comfortably, cocktail in hand, one is carried by the gentle breeze drifting through Le Negresco. Here, as in days gone by, the Art of Living resonates in every gastronomic pleasure.

Masterpieces at Le Chantecler

Art takes pride of place at the table within the exceptional setting of Le Chantecler and the Salon Régence. In these salons, some of Le Negresco’s most treasured works narrate the elegance and refinement of the great French styles. Nattier’s portrait of Marie Leszczynska, La Tour’s painting of Louis XV, wood panelling from the Château de Chaintré, and embossed leathers from Malines converge in a setting of rare refinement, a tribute to the Grand Siècle and the enduring excellence of France.

Virginie Basselot draws her inspiration from the heart of the Mediterranean, where the excellence of local produce takes centre stage. Freshness, seasonality, and proximity are the guiding principles of this Meilleur Ouvrier de France, who elevates each ingredient with elegance, audacity, and technical mastery. Around her, a passionate brigade – from her sous-chefs Michelle Gibon and Amélia Losilla to chef de partie – brings to life a vibrant Mediterranean: iodine-rich, plant-filled, and earthy. Each plate pays homage to the rich traditions of Nice, with deep respect for its heritage and the momentum of a resolutely contemporary creativity.

An ever-present Heritage

In 1957, the visionary and passionate Jeanne Augier transformed Le Negresco into a hotel of art and history. Through rare pieces and majestic styles, she created a unique masterpiece on the Riviera. At the heart of Le Chantecler and the Salon Régence, art graces the table: a portrait of Louis XV by La Tour, Marie Leszczynska by Nattier, wood panelling from the Château de Chaintré, or leatherwork from Malines… Every detail reflects the elegance of the Grand Siècle and the finest expression of French excellence.
