As Head Sommelier, Jean-Gabriel Siviragol embodies a modern vision of the craft – one that is open to the world, rooted in terroir, and firmly centred on the guest experience. He brings a spirit that is both precise and vibrant, making wine accessible without ever oversimplifying it.

Born in Nîmes, Jean-Gabriel realised his calling for hospitality and gastronomy at a young age. Trained in hotel and restaurant management, he found his vocation in the dining room under the guidance of meticulous maîtres d’hôtel, before turning to the world of wine under the caring eye of his uncle, a cellar master. ‘As I learned the food menu, I came across the wine list – and I’ve never put it down since.’

This revelation prompted him to hone his expertise within the Maisons Alain Ducasse, where he expanded his knowledge of wine heritage at Christophe Bacquié’s restaurant in Le Castellet, Ômer at the Hôtel de Paris in Monaco, and Pavyllon at the Hôtel Hermitage in Monaco.

In Mauritius, he explored every facet of the profession – from managing operations at one of the island’s largest wine cellars, renowned for its selection spanning 15 countries, to leading a team of 30 as manager.

A passionate fisherman and committed lover of the sea, Jean-Gabriel found a renewed source of inspiration in Nice, where cuisine, wine, and the Mediterranean blend together. In October 2024, he joined Le Negresco and its Michelin-starred restaurant, Le Chantecler.

From the outset, he presented a bold, modern vision – aligning the wine list with Chef Virginie Basselot’s new gastronomic identity. Through this approach, he also highlights living terroirs and the people who bring them to life.

Captivated by the hotel’s atmosphere, the richness of its culinary offerings, and the fresh energy energising the House, Jean-Gabriel creates food-and-wine pairings that delight even the most discerning palates.

He quickly turns wine into a genuine experience. Standing alongside guests, he provides attentive, instinctive guidance – a blend of technical accuracy and a celebration of the present moment. ‘Wine is not merely about knowledge. It is about memory, emotion, and sharing.’

Vibrant and passionate, Jean-Gabriel is also a true challenger – someone who approaches each task as both a challenge and an opportunity for growth. Alongside Julien Freulon, Le Chantecler’s Restaurant Director, he shares a common goal – to make wine a language that serves gastronomy.
