Since March 2025, Ludovic Turbot has brought a demanding yet generous vision to La Rotonde and Room Service – one that combines the excellence of French hospitality with a profoundly human approach.

Born into a family rooted in gastronomy, he developed an early sense of rigour and respect for craft. His father – Head Chef at Le Negresco two decades ago – left a lasting mark on the hotel with his talent. Completing this lineage are a grandmother who was a charcutière and a grandfather who was a master cheesemaker – proof that, for Ludovic Turbot, respect for savoir-faire is as much about transmission as it is about passion.

Although he began with a Higher National Diploma in Real Estate, he soon followed his true passion – the world of restaurants. He honed his skills at Byblos in Saint-Tropez for over four years, building a solid foundation of discipline and enthusiasm. He then co-managed Le XVII sur Vin in Paris with his father – a family venture born from their shared love of wine – before joining the Hyatt Paris Madeleine as Food & Beverage Manager, where he developed a balanced approach to operations and people management.

Longing to settle in the South of France with his family, Ludovic saw the opportunity to return to Le Negresco as a natural chapter in his story. Attracted by the hotel’s unique spirit, he also sensed echoes of his youth: ‘I used to wait for my father at the end of his service in the kitchens. Coming back here carries a deeply personal resonance.’ He recalls feeling an immediate sense of pride: ‘I was thrilled to join this institution, which places people at the very heart of its vision.’

Recruited for his entrepreneurial mindset and his belief in collective intelligence, Ludovic Turbot stands out for a leadership style that is both demanding and unifying. ‘I work alongside my teams. I expect excellence from them every day – and I hold myself to the same standard.’

At La Rotonde, he has discovered an environment close to his heart – a convivial atmosphere and refined, high-quality cuisine. His goal is to make each service a signature moment and to establish the restaurant’s new identity for years to come. Day by day, he supervises and trains his teams while expanding the restaurant’s local presence among an epicurean clientele. Leading more than forty colleagues, he works closely with Michelle Gibon, Head Chef at La Rotonde, to reinforce its status as one of Nice’s essential dining destinations.

Today, Ludovic Turbot perfectly embodies the spirit of Le Negresco – faithful to its heritage, yet firmly focused on the future.
