HEAD HOSTESS AT N LA PLAGE
‘I want every guest to leave with a smile. If I manage that, then I’ve fulfilled my mission.’ This is how Mathilde Pennucci describes her role as Head Hostess at N La Plage. Behind her radiant energy lies a career shaped by unwavering determination and a profound desire to put people at the centre of every experience.
Born and raised in Nice, Mathilde embodies the heritage of two worlds – Mediterranean and hospitality. The daughter of a Clé d’Or Head Concierge and a mother who worked as an Executive Assistant at the Élysée Palace, she grew up in an environment where service excellence met the warmth of genuine hospitality. Guided by her desire to help others, she initially worked in social care as a youth worker and mediator, dedicating herself fully to her mission before steering her career towards new horizons – without ever relinquishing the human values that continue to motivate her.
A lunch at La Rotonde and a meeting with Manuel Enfedaque marked the start of a new chapter. Competitive by nature, Mathilde quickly gained the respect of the teams at Le Negresco. Recruited in 2022 for the opening of N La Plage, she was mentored by Daniel Dragomir, who became a true guide, well beyond his role as Deputy Manager. ‘He always encouraged me to aim higher. Thanks to him, as well as to Thomas Joossen (Director of N La Plage) and Sébastien Volontier (Head Chef of N La Plage), who joined us the following season, I was able to grow and develop. If you work with your heart, they will open theirs to you.’ After three seasons, the path forward was unmistakable and, in October 2024, Mathilde signed a permanent contract for a newly created position, ensuring her ongoing presence with both the hotel teams and guests.
Today, Mathilde manages work schedules, oversees reservations, addresses guest feedback, and acts as a vital link between the areas – the beach, the restaurant, and the lounge – all while training new talent with empathy and grace. Her vision of the profession is clear – ‘We are not receptionists – we welcome guests.’ This subtle yet essential distinction reflects her dedication to guest enchantment, a cornerstone of Le Negresco’s philosophy.
A true role model for her teams, Mathilde embodies a steady and positive presence. Team spirit is the value she values most, and her management style reflects her personality – humane, attentive, and highly unifying. A natural mediator, she promotes communication and harmony, convinced that both are essential for excellence.
